For Fresh Carrot Hummus we need:
- 5 cups grated carrot,
- ½ cup blanched almonds,
- 2 cloves garlic - chopped,
- ½ cup extra virgin olive oil,
- ½ cup tahini,
- ½ cup orange juice,
- 1 tbsp lemon juice,
- 2 tbsp smoked paprika,
- 2 tbsp ground cumin,
- 2 tbsp chopped coriander leaves,
- salt and ground black pepper.
Place all ingredients in a food processor and whizz to make
a spreadable, smoothish dip. Adjust seasoning to taste. Thin as desired with
water or extra oil. Transfer to a jar and store in the fridge until needed, for
up to 5 days.
This healthy and beguilingly creamy dip is great as a snack. Could be lunchbox
filler with vegetable bites or crackers. It is great with bruschetta.
